Brendan drives the food revolution! Our customers have asked us to deliver deep insight in the microstructure of raw plant materials and how structures change upon ageing, heating, shear, and some special other conditions. This requires a multiscale approach and that’s what Brendan likes. Research is surprising, and in the end rewarding! It’s great to see that the answer of difficult microstructural questions often lies in the combination of contrasting methodologies, such as cryo-SEM and Confocal Microscopy, in combination with smart experimenting.
