Casper stands on the shoulders of earlier Consistence colleagues: Hhe studies the structure of a plantbased food product at multiple length scales. Using different methodologies, including Confocal Microscopy and Cryo-Scanning Electron Microscopy, but also lots of literature and interviewing experts, he creates a series of schematic images at length scales from 1 nanometer to 1 meter. The challenge is to find back where ingredients are located and how they interact to create an optimised functioning during processing, in kitchen, and in mouth. Not so easy….. Fit for Casper
